Blue String Pudding!

I based my Blue String Pudding on a recipe for
Cinnamon Kugel (dairy-free), but you could use any kugel recipe.

Ingredients

  • 1 pack noodles (egg or rice: egg noodles will give your pudding a delightful turquoise tint, rice noodles will take the food colouring better)

  • 100g unsalted butter or non-hydrogenated margarine

  • 3 tablespoons honey

  • 2 tablespoons ground cinnamon

  • 4 eggs

  • 100ml soy milk

  • punnet of blueberries

  • 1 bottle blue food colouring



Method

  1. Preheat oven to 190oC. Butter a large baking dish / casserole.

  2. Cook the noodles in unsalted water, and drain.

  3. Stir food colouring through noodles and set aside to blueify.

  4. Melt the butter, beat the eggs.

  5. Liquidise half the blueberries, and add the butter, honey, cinnamon, eggs and milk. Blend until smooth and purple.

  6. Add purple stuff to blue stuff.

  7. Pour noodle mix into baking dish, adorn with the rest of the blueberries, bake for 40-45 minutes.



Can be served hot or cold (I prefer it hot). Good with ice cream. May cause hyperactivity, knittedness and whistling.

I made some today instead of Xmas Pud and it was scrummy! I had to use Tesco gluten free pasta, as the one in Lockerbie has stopped stocking rice noodles, and blueberry jam rather than fresh blueberries + honey, but lo, it is very blue, and it is yummy :-D
