Dear Gourmands,

I need to buy a tin of rillettes. Any flavour. By Thursday night.

If you know of a retail outlet (supermarket or specialist shop, though the latter may be tricky to get to!) please drop me a comment.

Sadly, I do not have time to go cross-Channel and pick up a gross for a couple of euros.

I'm pretty sure I got my last lot at the French butcher next to the fishmonger in Borough market but that won't work given the deadline.

My other guess would be Harrods. If you can't stand the full deal, they now have a deli over the road.

Forget Harrods, I've just remembered that I bought my last rillettes at Fortnum and Mason. They have them in jars, but also by the pound.

Rillettes are gluten free, while pate is not.

D just phoned me from Ashford, so I mentioned your needs. The plan was already for D to go shopping for marrons glaces etc. but we're not sure if there'll be rillettes in nearby shops. Hopefully, D will be online from the astronomy institute by this afternoon, and can communicate with you directly. F&M is not a possibility?

F&M will be very difficult for me to get to -- I work in Horsham and shan't be in London before Friday night (though a Minion should be at the Ton). Rielletes de Porc or D'Oe?

Sainsbury or Waitrose often stock the former. Alternatively it's relatively easy to make - cook the meat, shred, and then pound together with the appropriate fats.

Rillettes are pretty much nothing but roast meat and rendered fat!

Mary makes a rather good goose riellette from the leftovers each christmas...

Apparently it's one of meat to two of fat, but you can make do with one to one..

For posting to NZ, I think a tinned version would be better! (Also, perhaps not the kindest thing to cook in a vegetarian's kitchen.) Will check Sainsbury's and Waitrose though -- thanks!

I work next door to F&M, and can drop in and buy something, then bring it to the ton.

Borough Market is technically open on Thursday, but only a few of the stalls are actually trading. If it could wait until Friday, it would be a good bet.

that's ever so kind of you! Let me check with D in Paris, but if it's not straightforward for him then F&M is certainly the best option. I shan't be at the Ton myself but will send a minion with monies. You are a star, Dr P!

I know the Rosslyn Hill deli sells it because I've seen it in there. And I expect Selfridges will sell it too.
